Die Frage ist also: Warum sucht Grub im falschen Pfad nach seinen Dateien?

Default bei Debian müßte ja /boot/grub/ sein.

Wird irgendwo in den configs der Pfad frisch gesetzt?

Grub-install kennt die Option --boot-directory=DIR
             install GRUB images under the directory DIR/grub instead of the boot/grub directory.
