Ja. Eine eigene /etc/exim4/exim4.conf hat Vorrang vor der Debian Konfiguration. Aus /usr/share/doc/exim4-config/README.Debian.gz 2.1.6.1:

Ich verwende schon seit Jahren eine eigene exim4.conf, weil ich mit der Debian Config auf Kriegsfuss stehe, wie Marc weiss. ;-)
Allerdings sollte man sich schon ausgiebig mit seinem MTA beschaeftigt haben, diesen verstehen und bei Bedarf die Exim Dokumentation lesen und verstehen koennen.
In aller Regel sollten normale User mit normalen Anwendungsszenarien wie deinem wohl bei der Debian Config bleiben.
