It is not missing.

Check the .deb in your /var/cache/apt/archives (if you didn't clean it),
it is contained therein.

And also here 
	dlocate /usr/bin/etex
gives me telxive-binaries.

Please simply recreated it with
	ln -s pdftex /usr/bin/etex
(as root)

I don't know how it has disappeared on your computer, but it is definitely
not missing.
