Nested paired delimiters do not work properly. The closing outer
delimiter is the same size as the inner
delimiters, while it should be the same size as the opening outer delimiter.
Here is a minimal example:
\documentclass{article}
\usepackage{mathtools}
\DeclarePairedDelimiter\set{\lbrace}{\rbrace}
\begin{document}
\[
\set[\big]{\set[\bigg]{}}
\]
\end{document}
This is a known and solved problem with the mathtools package, see e.g.
http://newsgroups.derkeiler.com/Archive/Comp/comp.text.tex/2007-05/msg01281.html.
A fix is included in the latest mh package on CTAN.
