Got it! Finally.

There's a combination of factors here that made things end up so very, 
very differently.

The first, and most important is the one shown in the previous mail of 
this thread: because of the missing TeX configuration files, the .ps file 
would be generated differently and, instead of having:
%%BoundingBox: 0 0 595 842
%%DocumentPaperSizes: a4
it would have:
%%BoundingBox: 0 0 612 792

There were probably other differences in the ps files as well, but that is 
the most visible and identifiable.
This issue was fixed by reinstalling the missing configuration files and I 
can reproduce it by deleting (or moving) them.

The second is something I just discovered. On my etch and sid amd64 boxes, 
I had both gs-gpl and gs-esp installed, with dpkg-alternatives pointing 
to gs-esp; on the sid i386 box I only had gs-gpl.
And these behave very differently.

gs-gpl will _always_ generate "letter" by default
gs-esp will _always_ generate "a4" by default

This produces some interesting effects:
a4 ps file -> gs-esp     : a4      OK
a4 ps file -> gs-gpl     : letter  no top margin
letter ps file -> gs-esp : a4      double top margin, no bottom margin
letter ps file -> gs-gpl : letter  no bottom margin

So, there you have all the variants I've been seeing, perfectly explained 
and reproducible :-/
