The first 'define' might want to be 'identify' and the second 'perceive'
for

  "It doesn't matter how you identify yourself or how others perceive
  you: we welcome you."

Or possibly:

  "It doesn't matter how you choose to identify or how others perceive
  you: we welcome you."
