Thanks for responding. It was a bug fixed in 3.0.1-5;Debian Bug report logs - #658004 cups-pdf:  usage prevents text content search

Looks like cups-pdf-3.1.0-5 is in Testing and Sid, however, I run Stable. It isn't in Stretch or backports.
