Apple's OS (at least prior to OS X) didn't deal with any non-palletized video mode where the color field sizes weren't equal. Apple just didn't care to support such modes for a variety of reasons (not the least of which is it's very difficult to have truly balanced color selections in a 5:6:5 mode). So, since Apple's OS didn't support it, most Apple hardware didn't properly - if at all - handle 16-bit color depths.
