If you need a loads of opening dialogues, you do somethig wrong, I'd say.
For the other bug in GNOME3 (Format->Character) - people should use Styles for
reoccuring things and not hard formatting. Similar in your case, probably,

But as said, your claim that "it's not impossible to work fluidly" is wrong,
the dialog is there fast enough in cases you need it. IMHO.
