just guessing, but:
Am I right you have a mainly Sarge or Woody system?  In that case the
dependencies might not automatically resolve.  Try using aptitude
instead of apt-get and see what happens; or just try:

apt-get install -t unstable openoffice.org openoffice.org-debian-files openoffice.org-bin
