soundfonts correctly AFAICS:
file FluidR3_GM.sf2
FluidR3_GM.sf2: RIFF (little-endian) data SoundFont/Bank

Maybe something can be learned by looking at what "file" checks for when
it decides that this is a SoundFont/Bank type of file?

Ah, OK. I feel slightly stupid for not having tried 'file'. This suggests that the problem I'm seeing is GNOME / Nautilus specific. Which means that we're on roughly the right track.
