The reason I prefer the override, even though it is longer, it that it
clearly limits the scope of the option I'm setting. This is helpful to
contributors to the package, or new maintainers. `man dh_strip` gives
them all the info they need.
The effects of DH_OPTIONS=--dbg-package might be obvious to an
experienced packager but a newcomer might not know that it only affects
dh_strip, hence instead of `man dh_strip`, an internet search or IRC
inquiry is required.
