Perhaps the zh_TW locale user can give some feedback in debian-l10n-chinese mailing list for task-chinese-t-gnome-desktop.
I might be misunderstanding, but I think both zh_TW and zh_HK normally use traditional Chinese characters, so task-chinese-t-gnome-desktop should ideally be suitable for both?
I think in the short term I'm going to revert the upstream change, so that we keep the Debian 12 behaviour (ibus-table-cangjie5). If someone from Hong Kong tells us that ibus-cangjie would be better, we can ask for a freeze exception for that change separately.
