JAVA_HOME=/usr/lib/jvm/java-6-openjdk-$(DEB_HOST_ARCH)

or backport friendly:

JAVA_HOME = $(firstword $(wildcard /usr/lib/jvm/java-6-openjdk-$(DEB_HOST_ARCH)
/usr/lib/jvm/java-6-openjdk))
