I ran into the same problem this week when I started playing with
Hurd, and since the people here were so kind as to help me, I must
return the favour.

The version of GRUB you have is probably old, and can't boot
the compressed files.  Just gunzip gnumach.gz and serverboot.gz and
everything should work.  Well, it did for me, anyways.
