I don't know, which version you tried, but looking on [1] I see that thuban is on the GIS-Knoppix since version 1.1 and qgis since 1.2. Again: If your aim is to have a school oriented GIS Live-CD it could be worth to contact the people around GISIX, since they are currently planning to do the same. At least this could reduce your and their effort.
