I've found the reason why in the log :

sudo-ldap conflicts with sudo
and
sudo conflicts with sudo-ldap

and also gksu depends on sudo
but:
Jun 23 19:51:02 in-target: You have asked that the sudo package be removed,
Jun 23 19:51:02 in-target: but no root password has been set.
Jun 23 19:51:02 in-target: Without sudo, you may not be able to gain
administrative privileges.
Jun 23 19:51:02 in-target:
Jun 23 19:51:02 in-target: If you would prefer to access the root
account with su(1)
Jun 23 19:51:02 in-target: or by logging in directly,
Jun 23 19:51:02 in-target: you must set a root password with "sudo passwd".
Jun 23 19:51:02 in-target:
Jun 23 19:51:02 in-target: If you have arranged other means to access
the root account,
Jun 23 19:51:02 in-target: and you are sure this is what you want,
Jun 23 19:51:02 in-target: you may bypass this check by setting an
environment variable
Jun 23 19:51:02 in-target: (export SUDO_FORCE_REMOVE=yes).
Jun 23 19:51:02 in-target:
Jun 23 19:51:02 in-target: Refusing to remove sudo.

I've installed main-server + thin-client-server in french
the exact error is:
"Use of uninitialized value in numeric ge (>=) at
/usr/share/perl5/Debconf/Priority.pm line 24, <GEN1> line 14"
with a lot of different "<GENx> and "line x"
