(Hopefully) solved:
The only thing that changed after reinstallation was the order / role of
the network cards. After swapping eht0 and eth1 roles
in /etc/network/interfaces and /etc/default/dhcp3-server all seems to
be fine. Seems like some nics hate each other ;)
