Seems you totally missed XMPP-based chat.

Regarding security: An alternative to end-to-end encryption is to run 
your own server.  Multiple participants in a conversation can each be 
secure if the service is federated so each can host in on their own.  Or 
leave hosting to a friend - sometimes it is more secure to let someone 
more skilled handle things on your behalf.  XMPP is flexible.

XMPP (the network used for Jabber) is a federated service.

Debian has 135 Jabber clients/servers/libraries: axi-cache search jabber

(axi-cache is like apt-cache but smarter - in package apt-xapian-index)
