You should be able to install on a lion just fine, see 

        http://www.debian.org/ports/ia64

for a pointer to an installer-only CD image that will do the job.  

Note that there is a problem running recent kernels with some old lion 
firmware versions, more information is available on that same web page.  If 
you have any problems or questions, ask on debian-ia64@lists.debian.org and 
we'll be happy to help.

For what it's worth, merulo.debian.org is a lion ...
