Right before you press "y" to send the mail, press Esc, f (that's to 
press Esc, release, then press f), and mutt should then let you set 
the "From:" field.

I'm not sure how to set it premanently, but I'm sure it's one of the
options in your muttrc(5) file ...

Look for the "subscribe" options in the muttrc(5) man page.

Also the online help in mutt can often give you clues about its 
functions.
