I think you can use simple-cdd to pretty easily create this. To determine the
right target size check /usr/share/debian-cd/CONF.sh and look for the
STICK<X>GB (e.g. STICK128GB) or the CUSTOM environment variables. Then extract
the package lists (maybe parsing a mirror's Packages* files or using aptitude)
to create profiles/main.downloads, profiles/contrib.downloads, and
profiles/non-free.downloads to include all the packages available. Use them as
build profiles and build your custom installer CD.

IMHO this is not too hard but it requires somewhat free disc space available.
