DVD Hierarchy documentation

Hi,

I want to remaster Debian DVD (Sarge 3.1) for special purpose in our 
school,
custom installation, specific info, and other.
Main change would be in:
-    Installation text
-    predefined packages
-    predefined options

Is there any documentation that explains hierarchy of Debian DVD, I suppose
new dev people don't just roam and find workings of Debian install 
procedure through
exploaration only, there must be some specification I assume.
