Bug#1118488: debian-installer: testing/unstable d-i snapshots should not identify themselves as Debian 13

Similar to #1084903 and #1118486, it's misleading for the d-i snapshots
that install testing/unstable to say "Debian 13" in the grub splash
screen.
When new branding is available - either visually distinct
not-the-stable-release branding as suggested in #1038660, or official
Debian 14 branding during the freeze - debian-installer can have that.
Until then, the next best thing would be to keep the Debian 13 visual
identity but delete the "13" from the logo, as is done in the MR linked
above. As with the corresponding desktop-base and rootskel-gtk changes,
ideally this would be something that happens shortly after each new
testing branch opens.
