When partitioning, I chose the guided partitioning, got to the review
screen (with the undo changes/finish and write options), and wanted to
go back and manually  edit the partition table.  When I went to "Guided
Partitioning" and selected "Manually edit partition table," the
installer simply handed me back to the review screen without letting me
edit the partition tables.

Ah, but the review screen _is_ where you edit partitions ;-)

Just select one and hit enter.
