Thats exim4-config after the first reboot, right?

Has nothing to do with d-i, bug the maintainer about it.

I would guess 99% want to fetch mails (probably fetchmail) and send
via smarthost. The number of users wanting local mail only I would
guess to be 0% (+1 user for you :).
