Try this..../etc/apt/preferences
Package: *
Pin: release sarge-backports
Pin-Priority: 200

For OO.org2
Package: openoffice.org
Pin: release sarge-backports
Pin-Priority: 999

That worked for me.  BTW you need java installed to install oo.org2.
