Thanks. For some reason I thought I've read Sarge amd64 has
been declared official.

Am I save with below /etc/apt/sources.list for time being?

deb ftp://ftp.de.debian.org/debian-amd64/debian/ stable main
deb-src ftp://ftp.de.debian.org/debian-amd64/debian/ stable main

deb http://security.debian.org/ stable/updates main

deb http://apt.utsl.gen.nz/debian sarge all

If I want to build a 64 bit vserver sarge guest, which debootstrap syntax
do I need?

I've tried 

vserver v65 build --force -n v65 --hostname v65.ativel.com --context 65 --interface eth0:85.10.225.65/24 -m debootstrap -- -d sarge -m http://amd64.debian.net/debian-amd64/

which no longer has sane preferences for apt-setup.
