The easiest way is to uninstall the package gdm, if you never intend to
use it (that's the way I did).
Otherwise, you could always remove the starting of gdm från your
/etc/rcX.d-directories.
I guess there's some front-end for choosing what services to run or not,
but manually is always macho and cool.
