So this is not actually a problem with the debian installer or
accessibility? Probably better ask debian-user@lists.debian.org or
report a bug against the alsa-lib package about it.

Yes, this was already reported, and in the todo list: it needs some
implementation on the grub side. They agree on the feature, it's now
"just" a matter of somebody taking the time to implement it.
