It does, but you need to go into expert mode to do that (or press 'esc'
while the DHCP configuration is running).

The 'default' mode is intended to be for people who're not too familiar
with computers, and intends to ask as little questions as possible. If
you want to fine-tune more things, you need to run it in expert mode
(either by using the 'expert' boot option, or by adding the
'DEBCONF_PRIORITY=low' boot parameter, which amounts to the same thing).
