I had a home dhcp&dns server running on a 800MHz CPU with 128 MB memory. No GUI, but once booted the device did its job. I have replaced that with a 512 MB Raspberry Pi.

So, yes, it is possible. You probably won't be able to use Gnome or KDE, but as long as you have time to try them out, there are plenty other light Desktop Environments out there.
