Afair raid 5 would "eat up" the disk you buy, i. e. you get so much
disk space as (number_of_disks - 1) * diskspace, provided that the
disks are all the same size. So if you get another 1 TB disk, you get
two times the diskspace for the price of one disk, sort of, but you
don't get any more disk space than you already have, sort of :)

So it's up to you to think through the available options, including the
potential use of LVM and hardware raid controllers, and to decide which
one suits your needs best.

In any case, it should be possible to install on a raid 1.
