I modified a Knoppix cd for this purpose a while back. If you go to
www.knoppix.net they have a howto on remastering a cd. Just edit Grub's
menu.lst so that the default boot option does console only (not
required, but why use extra ram for gui stuff that you won't be
using?). Then I think I added my config for a static ip and starting
ssh to /etc/init.d/knoppix-autoconfig.
Worked great for me, but of course YMMV.
