To get the "drive mirroring" that you describe, you want to use RAID 1. I hope you are referring to a hardware RAID (firmware running inside a seperate RAID controller) and not some form of software RAID, as those things are crap. In addition to the RAID 1 setup, you want a server that allows you to "hot-swap" the bad drive without having to power down the system.
