Have you tried running gtklp? That application will setup the default
settings for the CUPS printer. It may be that your default settings are
setup for black and white. The reason why Gimp works is probably because
you are using the Gimp-Print cups printer driver and that means that the
Gimp is capable of doing all the settings needed by itself.
