Yes (change 'stable' to 'testing' in /etc/apt/sources.list), or see
http://cdimage.debian.org/ for unofficial CDs.

Shouldn't be difficult. See
http://www.debian.org/releases/woody/releasenotes for what information
has been collected so far.
