For introduction and normal use: (the lion book)
Lamport: "LaTeX - A document preparation system", 2. edition, Addison Wesley
For advanced use and customisation: (the dog book)
Goossens et al.: "The LaTeX companion", AW
There's also a newer one in the same series, dealing with graphics.
These are not only good, they are The Best [tm]. (IMHO of course :-)
