Thanks for the suggestion.
It didn't help a whole lot at first because the unpacking phase always overwrote the manual changes.

The hint helped though. After a few iterations of no-opping the *postinst and *postrm scripts with exit 0, I managed to get the the package fully installed, then removed (and purged).

A bug report has been filed (339487).
