2. I copied the chroot "/etc/inittab" to "config/includes.chroot/etc/inittab" and uncommented this to spawn a serial console (note the change of speed, too)

Okay, I just realised that the inittab in "chroot/etc" is NOT the same as "/etc/inittab" on the built image, and the file that I was giving it was completely wrong for the live system. Is there a more sensible way to configure a serial console on a live system?
