Changing string sorting/collation in various gnome apps?

After a recent update in unstable, I'm finding that string sorting in
various gnome apps has changed. I'd like it to go back to the way it
was. Is there a way to configure this?

Basically, Evolution, Nautilus and the gtk file selector no longer sort
upper case ahead of lowercase. I understand that this is probably a good
idea for new users, but I've been using this feature to separate
important directories, files, and mail folders and I'd like it back.

Any pointers?
