The ls sorts alphabetically, so it suffices to call the patches
01_firstpatch.patch, 02_anotherone.patch, etc.

Indeed. I try to to keep the changes I make to a package, contained to
the debian/ dit. That also makes packaing new upstream packages a lot
easier.
