The solution to your problem is well-known. Install woody 
and inside a sid chroot. Install in the chroot the softwares you
need to be current version.

If a problem with sid happen, it will not affect the whole machine and
you will be able to revert to the woody version.

More importantly most security-sensitives software will be from woody and
will benefit from the woody security update.

Packages involved: debootstrap, dchroot.
