This is very likely a side-effect of the other problem you
reported (#382388) about partman-crypto creating only one crypto
volume at a time. 

The options partman shows depend on whether an existing
filesystem was detected during partman startup. If you looked at
an encrypted volume that had already been formatted because of
the above bug, it would leave out all options like that.

I've just checked that the options shown for ext3 on a "fresh"
(unformatted) crypto volume are the same as for ext3 on a plain
partition except for the bootable flag, so I think this must
be the described consequence of #382388. Please reopen in case 
it is reproducible with a fresh crypto volume.
