The subject and his question repeatedly said 'mkfs' so I assumed he meant
it.
I believe the available options for _partitioning_ are covered in the Debian
install guide for Mac. 
 
mac-fdisk contained on the install ramdisk should work with both IDE and
SCSI
drivers BTW.
