One of my workmates had some time add support for the latest version of
thrift. 
With that PR (https://github.com/ogon-project/ogon/pull/35) now merged to
master we get the following that should help with packaging:

* support for thrift version 0.13 (as found in bullseye) (it possibly
  still works with version < 0.13 but I didn't test)
* the thrift library .so file if found is preferred over the .a file

As a bonus the PR also fixes the Debian package we used to test with
https://github.com/ogon-project/ogon/tree/master/packaging/deb/ogon - so
there is a basic package blueprint that works on bullseye.
