By source and binary inspection:

missing Breaks/Replaces on each other, they can't be both installed at
the same time. But it is possible that that is handled properly via
their Provides. Did you actually test this?
- Why are there still plugins in the doublecmd-(gtk|qt) packages?
- Did you deliberately put some documentation in
/usr/share/doublecmd/doc? I think it is more appropriate in /usr/share/doc/
- Am I mistaken, or are the debian/*.dir files not doing anything useful?
