Various TeX, LaTeX, and DocBook tools.  ps2pdf (part of the gs package
IIRC).  I thought some of the wordprocessing tools produced PDFs, but
checking OpenOffice and AbiWord I don't see this.

Either will produce postscript output (print to file) which can be
converted to PDF.
