I just did a test. (jessie-backports)

It "works" (is in the notification area which is hidden in GNOME3
at the bottom...) when you have both libreoffice-gtk and libreoffice-gtk3 installed.

But if you "loose" -gtk it crashes.

So it's not a bug of a crashing Quickstarter in a gtk3 environment, but apparently
the option strictly assuming -gtk and the Quickstarter is there if enabled.

Given the above I think it's worse, it probably should be disabled. Especially as it's
not really helpful anyway hidden...
