Yes, these are underdocumented.  Maybe §4.2.1 "Preparation" would be a
good place to describe them.

I think DEBIAN_KERNEL_USE_CCACHE is obsolete.  Perhaps it was needed
with old versions of the ccache package that didn't create links for
all compiler versions, but ccache seems to be used automatically in any
currently supported release.

DEBIAN_KERNEL_DISABLE_DEBUG should be replaced with a build profile
rather than being documented.  We already document how to disable debug
info by editing debian/config/defines.
